Mid-State culinary arts instructor published in Campus Dining Today
An article by Mid-State Technical College Hospitality Management and Culinary Arts Instructor Rich Neumann was recently published in the summer edition of Campus Dining Today®, the official magazine of the National Association of College and University Food Services (NACUFS). The article highlights how to use data from two surveys Neumann helped write to run a food operation more efficiently.
With dining operations at universities under immense pressure to provide the greatest value at the lowest cost while generating a bottom line to support the university, Neumann’s article explores the use of data from NACUFS operating ratios and salary surveys to provide directors with needed information to run an efficient and respected dining program.
“My true passion is teaching and sharing knowledge that will help others advance their careers,” said Neumann. “Writing articles allows me to share beyond the classroom and keeps me on top of my profession.”
In addition to teaching culinary arts classes at Mid-State, Neumann’s experience includes work as a foodservice consultant as well as director of culinary services (retired) at Ohio University. He is also the author of Financial Management for Foodservice, an online learning series for supervisors and managers in college and university foodservice looking to gain knowledge and grow skills in financial management.

Campus Dining Today is published three times a year with a print circulation of 2,600 and digital circulation of more than 6,000 key decision-makers and influencers in collegiate foodservice. It focuses on industry trends, current events, member initiatives and organizational updates.
